My name is Haidong Park. I have dedicated my life to craft of sushi, training as a chef across different kitchens and building my own restaurants. Through years of experience I've come to understand that true quality lies not only in technique, but in the precision and care behind every detail.
This dojo is a place for serious learning. Here, I share the essential foundations of sushi - rice, knife work, balance, and discipline - alongside the deeper knowledge that elevates good sushi into something exceptional.
